Primavera means Spring in Italian! Serve this vibrant and flavorful Pasta Primavera as a delightful springtime meal for family and friends. Pair it with a crisp white wine or sparkling water for a refreshing accompaniment.Delicious Pasta Primavera: A Burst of Spring Flavors
Ingredients:
1 pound of pasta (penne, fettuccine, or spaghetti)
2 tablespoons olive oil
4 cloves garlic, minced
1 small onion, finely chopped
1 red bell pepper, julienned
1 yellow bell pepper, julienned
1 cup cherry tomatoes, halved
1 cup broccoli florets (try frenched green beans,too!)
1 cup sliced mushrooms (I prefer diced)
1 cup snow peas, trimmed (optional)
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions:
Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta and set aside.
Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion. Sauté until fragrant and translucent, about 2-3 minutes.
Add the Vegetables: Stir in the julienned red and yellow bell peppers, halved cherry tomatoes, broccoli florets, sliced mushrooms, and snow peas. Cook for 5-7 minutes, or until the vegetables are tender-crisp.
Combine with Pasta: Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together gently to combine.
Season and Serve: Season the Pasta Primavera with salt and pepper to taste. Sprinkle grated Parmesan cheese over the top and toss once more to incorporate.
Garnish and Serve: Transfer the Pasta Primavera to serving plates or a large platter. Garnish with fresh basil leaves for a burst of color and flavor.
