Fun and Fruity Watermelon Pizza

Ingredients:

For the Base:

  • 1 large round slice of watermelon (about 1 inch thick)

For the Toppings:

  • 1/2 cup Greek yogurt (plain or vanilla)
  • 1 tablespoon honey (optional, for sweetness)
  • 1/2 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup kiwi, peeled and sliced
  • 1/2 cup pineapple chunks
  • 1/4 cup shredded coconut (optional)
  • Fresh mint leaves for garnish

Instructions:

1. Prepare the Watermelon Base:

  • Cut a large, round slice from the middle of the watermelon, about 1 inch thick. This will serve as the "pizza" base.
  • Place the watermelon slice on a large cutting board or serving platter.

2. Mix the Yogurt Topping:

  • In a small bowl, mix the Greek yogurt with honey if using, to add a touch of sweetness.
  • Spread the yogurt evenly over the watermelon slice, leaving a small border around the edges to resemble a pizza crust.

3. Add the Fruit Toppings:

  • Arrange the sliced strawberries, blueberries, kiwi, and pineapple chunks on top of the yogurt layer.
  • Sprinkle the shredded coconut over the top if using.

4. Garnish and Serve:

  • Garnish with fresh mint leaves for a pop of color and extra freshness.
  • Using a sharp knife, cut the watermelon pizza into wedges, just like a regular pizza.
  • Serve immediately for a refreshing and healthy summer treat!

Optional Variations:

  • You can use other fruits like raspberries, blackberries, peaches, or mangoes depending on your kids' preferences and seasonal availability.
  • For a bit of crunch, sprinkle some granola on top.
  • Drizzle a little chocolate syrup or a few mini chocolate chips for an extra special treat.

This watermelon pizza is not only fun and delicious but also packed with vitamins and hydration, making it a perfect summer dish for kids!
